
Why We Rebuilt the Summer Menu Around How People Actually Eat
Every few months, our culinary team sits down and asks a question that sounds simple but isn't: what do people actually want to eat right now?
Not what they wanted in January. Not what performed well last year. Right now, in this season, in their actual lives.
That question is behind everything we just added to the menu.
WE DON'T DESIGN MEALS FOR A CATALOG
It would be easy to build a menu that just rotates through categories — one more chicken dish, one more pasta, one more bowl — and call it new.
We don't do that.
Every dish has to earn its place. It has to hold up nutritionally. It has to taste like something a chef would actually be proud to put their name on. And it has to fit how people are eating right now.
Summer eating is lighter. Brighter. People want food that doesn't sit heavy in 90-degree heat, but still shows up with real protein and real flavor. That was the brief our culinary team worked from this round.
WHAT'S NEW ON THE MENU
A few of the dishes I'm most excited about:
Green Goddess Salmon with Quinoa & Summer Veggies — herby, bright, built around what's actually in season.
Coconut Curry Salmon with Quinoa & Asparagus — started as a team favorite and earned its way onto the full menu.
Creamy Sun-Dried Tomato & Artichoke Salmon — comfort food that still hits your protein target.
Moroccan Shrimp, Peppercorn Tri Tip Steak, and Asian Style Salmon with Basmati Rice round out the rotation for anyone who wants more variety without more effort.
None of these were built to fill a slot on the menu. They were built because our team tasted them and said, we'd actually order this.
THE PART PEOPLE DON'T SEE
What people see is a new dish on their screen. What they don't see is everything behind it — sourcing the right ingredients, testing macros against real nutrition goals, running it through production at scale without losing what made it good in the test kitchen.
That last part is the hardest. A dish that's incredible for one plate and a dish that's incredible for ten thousand plates are two very different engineering problems. That's the work behind every menu item we call "new."
